Killer Quinoa Salad You Must Try!

Quinoa (pronounced keen-wah) is an extremely nutrient dense ancient “grain” (although, not technically a grain – it’s the seed from the Goosefoot plant) from South America that was once a staple in the diet of the Incas. It has a nutty flavour and when cooked, the outer germ opens up and forms a tiny ring around itself. It’s high in protein, iron and calcium and contains all 8 amino acids. It is also a good source of vitamin E as well as several of the B vitamins. It must be rinsed prior to cooking to remove the naturally occurring resin called saponin which is quite bitter.
